Lentil Curry

Lentils are real comfort food. I love to eat lentils with breads such as Somali muufo or pita bread. Use lentils that hold their shape such as the brown or green varieties.

This lentil curry will take about 20 minutes to get on the table! A great advantage for many of us who are time poor but still want healthy and nutritious food that can be prepared quickly.

Lentil Curry

Ingredients

  • 2 tins of brown or green lentils or 2 cups of boiled lentils
  • ½ cumin seeds or powder
  • ½ teaspoon minced ginger
  • ½ teaspoon minced garlic
  • ½ teaspoon mustard seeds
  • Juice of one lemon
  • I finely chopped onion
  • 2 tomatoes, diced
  • ½ cup of water
  • 1 tablespoon oil
  • Salt to taste

Instructions

  1. Fry mustard seeds in oil for a few seconds. As soon as they start to pop add the chopped onion and fry until golden.
  2. Add the cumin ginger, garlic, salt and lemon juice. Cook for a minute or so and add lentils and diced tomatoes with some water.
  3. Simmer on gentle heat for about 10 minutes. Add salt to taste.
